Cornbread Salad

1 recipe of prepared and cooked corn bread
1 small onion, chopped
1 bell pepper, chopped
1 tomato, chopped
1/2 c. bacon bits
1/2 c.  mayonnaise
2 T. Mustard - I use Dijon
1/2 t. salt
1/2 t. pepper
1 t. sugar


Mix all ingredients together except corn bread. Crumble corn bread and place in large bowl. Pour all mixed ingredients over corn bread. Mix well together. Refrigerate, keeps well for several days. May add a little more mayonnaise and mix well again before serving if stored in refrigerator for several hours. Corn bread absorbs the moisture. Enjoy!
I like to serve this with cooked ham as my meat portion and black-eyed peas as other side dish. Brownies make a nice dessert.
