Creole Pecan Pralines

3 c. brown sugar

1/4 c. butter

1 c. light cream

1-1/2 c. pecan halves

1/8 t. cinnamon (optional)

 

Mix brown sugar, butter and cream, cook until a small quantity dropped in cold water forms a soft ball. Add pecan halves and cinnamon, beat until cool then drop by spoonfuls onto waxed paper immediately. Allow enough waxed paper between pralines to wrap each one individually.
