Enchilada Pie

1 pkg. tortillas
1 large onion, chopped
1 can Ranch style beans
1 can cream of chicken soup, low-fat
2 lb. lean ground beef
1 lb. Velvetta, cubed
1 can Ro-Tel
1 pkg. grated cheddar cheese
 
Brown hamburger meat and onion. Line pan with tortillas (torn in half). Pour a layer of hamburger, layer of beans, and layer of cheese. Add another layer of torn tortillas. Mix chicken soup andRo-Tel together. Pour over top. Cover with foil and bake 300°F for 1 hour. Top with grated cheddar cheese and heat until melted - approx 5 minutes. Served with Mexican Rice, salad w/ dressing and refried beans. Enjoy!
