Welcome to Kathy's Korner!

English Pea Salad

2 cans (15 oz) of young English peas, drained
1/2 c. shredded cheddar cheese
1 bunch green onions chopped (include some of the green tops)
1 small jar pimentos
2 hard boiled eggs, diced into small bites
2-3T. sweet pickle relish (to taste)
1t. yellow mustard
2-3T. mayonnaise (to coat all the ingredients)
Salt & pepper (to taste)
Mix all ingredients. Store in refrigerator covered. I like to make it ahead of time and let flavors blend as it chills.
