French Onion Soup

6 T. Butter

4 c. white onions (thinly sliced) I actually chop them

2 t. flour

1 T. sugar

1 t. dry mustard

2 cans chicken broth

1/4 c. white wine

2 t. worcestershire sauce

1 c. herb flavored croutons

1/4 c. grated parmesan cheese

1 1/2 c. shredded mozzarella cheese

 

Put butter in a 3 qt. microwave safe casserole dish and microwave for 1 1/2 minutes. Add onions and coat with butter. Cook for 30 minutes on high until brown and caramelized - stopping and stirring every 5 minutes. When cooked, add flour, sugar, and mustard, coat onions well, add the broth, wine and worcestershire sauce. Cook for another 10 minutes, stopping and stirring every 2 minutes. Divide into individual bowls, topping with croutons and cheeses. Place each bowl in microwave for 2 minutes to melt cheese. Serve - Be Aware - bowls and soup will be very hot!
