Bacon Wrapped Peppered Shrimp

Canola Oil (1 qt.) for frying*

1 lb. deveined and peeled raw shrimp (Leave tails on)

4-5 peppers, remove seeds and cut into small slivers (some use jalapeno, I use banana peppers)

1 lb. bacon (Cut slices in half, I use mesquite smoked bacon)

Box of toothpicks

 Heat oil in deep fryer or large skillet. Cut shrimp down back (like deveining) to make a small cavity to place pepper sliver into. Wrap shrimp/pepper combo with a 1/2 slice of bacon. Place toothpick through all to hold securely in place. Place several in hot oil to cook approx. 2-3 minutes. Drain on paper towel. It serves nicely with Ranch dressing for dipping. Several in my family add hot sauce to Ranch dressing for extra kick.

*If do not wish to deep fry, these can also be placed on cookie sheet and placed under broiler approximately 6-8 inches from heat and cooked for 8-10 minutes until browned.
