Kathy's Prime Rib
5-6 lb. Prime Rib
Garlic Pieces - 25 to 30 slivers
Dijon or Brown Spicy Mustard
Packs of Pepper Corn
/ Garlic Seasoning
Mixture of Seasoning Salt and Onion Salt (1/2 + 1/2) I use 2 T. of each to make mixture
Rub of your choice
Preheat oven to 350F. Lay prime rib on rib side in roasting tray in roasting pan. Cut X's on fatty
side of prime rib and insert garlic. I try to do every 1 1/2 inches for good flavoring. Next rub all of prime rib with mustard
- be generous. Now cover all of it including ends with all seasoning - I usually do them in order as above. Put roasting pan
in preheated oven 350F for about 2 1/2 hours. If using thermometer, internal temperature should be at least 130F. When finished,
take out of oven and allow to stand for about 10-15 minutes. Cut and serve. I serve with a salad and either potatoes or corn
on the cob.
