Layered Vegetable Salad

1 medium head lettuce, shredded
1 c. chopped green onions
1 c. thinly sliced celery
1 c. shredded carrots
1 can sliced water chestnuts
1-10 oz. package uncooked frozen English peas
 
Layer the above in bowl in order given.
 
Mix dressing:
2 c. mayonaise, 1 t. sugar, 1 t. vinegar, and 1/4 t. pepper.
 
Ice salad with dressing. Garnish with 2 c. shredded mozzarella, 1/2 c. Parmesan cheese, cherry tomatoes. Refrigerate 24 hours before serving. My friend adds a bottle of Bacos when she serves and also has just had the bottle beside the bowl where they could just add their own. It's cool and filling and nice to make ahead. Enjoy!
