Low-Fat Combo Mac

1 lb ground turkey or 1/2 lb. extra lean ground beef and 1/2 lb. ground turkey
1 large onion, finely chopped
1 bell pepper diced
1 clove garlic, minced (or equal amount of canned garlic)
1 (15 oz) can tomato sauce
2 c. water
1 small can English Peas (drained)
1 small can Carrots (drained)
1 c. macaroni (uncooked)
1/2 t. oregano
salt and pepper to taste
 
In a large non-stick skillet over medium heat, brown turkey/meat, onion, pepper, and garlic until meat looses pink. Drain any fat. Add rest of ingredients. Simmer for about 20 minutes with lid until macaroni is cooked and most of liquid is gone. Stir as needed to prevent sticking. I serve with blackeyed peas, salad, and bread. My friend adds a small can of corn at same time as tomato sauce and it is very tasty. She also serves it with sliced tomatoes and corn bread. Great for low-fat as long as you don't soak the cornbread in butter!
