Low Fat Pineapple Upside Down Cake

Toppings Ingredients:

Pam or other spray

2 T. Karo corn spray

1/4 C. brown sugar

1 T. lemon juice

7 maraschino cherries

 

Cake Ingredients:

1 C. flour

1 1/2 t. baking powder

1 c. sugar

2 egg whites

1/4 c. cornstarch

1/2 t. salt

2/3 c. skin milk

1/3 c. Karo corn syrup

 

Preheat oven to 350F. Spray 9 inch cake pan with Pam. Add brown sugar, corn syrup, and lemon juice. Stir to combine. Place in oven 3 minutes. Remove. Arrange pineapple rings and cherries in pan. Set aside. In large bowl, combine flour, cornstarch, baking soda, and salt. In other bowl (cold) with wire whisk - mix sugar and milk. Stir about a minute. Add egg whites, vanilla & corn syrup. Stir until well blended.

 

Gradually add flour mixture. Spoon batter over pineapple. Bake 35-40 minutes - until toothpick is clean. Remove from oven. Turn upside down on serving plate. Serves 12.
