Salmon Patties

1 can (approx 15 oz.) salmon
2 eggs
1 c. bread or cracker crumbs
1/4 c. finely diced onion
1/4 c. finely diced celery (opt.)
Oil for frying

 

Drain salmon. Flake salmon apart. Add eggs, 1/2 c. crumbs, onion, and celery. Mix well. Form into 6-8 patties with hands. Coat each patty with other 1/2 c. crumbs. Fry patties in hot oil until golden brown on both sides. Drain on platter lined with paper towels. Can use Pam Spray but patties will be dryer in texture. Serve with corn and salad.
