Submarine Sandwich Salad

6-8 cups of lettuce and salad greens
1 cucumber, peeled and chopped
1 tomato, chopped
1 zucchini squash (small) chopped
1 large bell pepper, chopped
2 avocados, chopped
1 small can black olives, drained and chopped
1 medium onion, peeled and chopped
2 cups shredded cheese (I use mixture of mozzarella and cheddar)
6-8 slices favorite lunch meat
1 large roll - cut into 1-inch squares/cubes
 
Dressing: 
1/2 cup mayonnaise
1/4 cup mustard (I prefer Dijon)
1/4 cup olive oil
1/4 cup vinegar
1/4 t. mustard
1/2 t. salt
 
Mix all dressing ingredients together well, then set aside.
 
Mix all salad items including cubed roll. Place in individual bowls. Apply dressing. Enjoy your sandwich with a fork! I serve with pickles on the side, can add sprouts if desired.
