Summer Pot Roast

1 small pot roast (feeds 4-6 people)
2 cans cream of mushroom soup
2 cans water
1 pkg. McCormick Roast Mix w/roasting browning bag
1 small pkg. carrots
1 small onion
1 small pkg fresh mushrooms
4-6 medium size potatoes
In crock pot, put 1/2 can mushroom soup. Place roast on top of soup. Sprinkle seasoning mix on top of roast. Put other 1/2 can of mushroom soup on top of seasoning. Place 1 can of water on top of this. Place vegetables on top of roast and seasonings. Top with other can of soup and water. Salt and pepper to preference. Cook 6-8 hours on low. I put mine on in the morning and have for supper at night. Doesn't heat up the kitchen in summer. Leftovers make great stew - just add canned tomatoes and canned corn. 
P.S. - Save the browning bag - we don't use it in this recipe.
