Super Moist Bread Pudding

2lbs. of supermarket bakery products (I like to use Cinnamon Rolls and Apple Danish combined.)

2 (12 oz. cans) evaporated milk

2 t. vanilla extract

1 t. cinnamon (I actually use 1 T. in mine)

1 small pkg. instant vanilla pudding

1/2 C. raisins

1/4 to 1/2 C. chopped pecans

1/2 stick butter


Chop up bakery products into 1 inch cubes.

Mix evaporated milk, vanilla, cinnamon, and vanilla pudding together and pour into sprayed deep casserole baking dish. Place chopped bakery products on top of mixture. Pat down until even. Allow 1 to 2 minutes for bakery products to soak up the mixture. Top with raisins and pecans. Dice up butter and "dot" the top of the mixture. Cover with foil and bake in the oven at 350°F for 1-1/4 hour

Extra tip: For easier cleanup and extra support, place the casserole dish on a cookie sheet cover in foil before placing in the oven.
