Zucchini Bread or Muffins
3 eggs, beaten
2 c. sugar
1 T. Vanilla
1 t. salt
1/2 t. baking powder
c. chopped nuts
1 c. oil
2 c. raw zucchini, shredded
3 c. flour
1 t. soda
1/2 c. raisins
Peel zucchini and remove seeds. Set aside. In mixing bowl,
blend eggs, oil, and sugar. Sift dry ingredients and add alternately with zucchini, blending well after each addition. Stir
in nuts and raisins. Pour into 2 greased and lightly floured 9x5" loaf pans, if making bread and bake at 325°F for
1 hour or until bread tests done.
If making muffins, fill greased muffin tins 2/3 full and
bake at 325°F for 30-35 minutes or until done. Let stand 5-10 minutes before serving. Makes 2 loaves or 24 muffins.
